In this video, we show you how to make an easy, delicious, and VERY nutritious Roasted Beet Salad! This recipe has been one of our go-to’s for a few years now. All you is roast some diced beets, then place on top of arugula (or your green of choice), dress with honey and lemon vinaigrette, and top with goat cheese and your favorite nuts.
Beets are a great low-calorie food, and they’re also high in fiber, vitamins/minerals, and especially NITRATES!
Nitrates are compounds that (once broken down) cause our blood vessels to vasodilate (expand), which can LOWER blood pressure and enhance blood flow throughout the body overall.
