Hi ladies, hope you all enjoy this yummy and healthy recipe. Its perfect for lunch or dinner and you can alternate the stuffing to your taste.
Stuffed potato paratha
Ingredients
200g wholewheat flour
Lukewarm water
2 large potatoes
2 onions
1 big bunch coriander
1 tsp salt
1tsp coriander powder
1tsp chili powder
1 tsp cumin seeds
4 tsp Olive oil
Method
Gently stir in the water in the flour until it forms a soft dough. Set the dough on a side to set for around 10 minutes. Boil the potatoes and mash into a smooth texture. Chop the onions finley and add in the potatoes alongside finely chopped coriander and the spices. Mix all the ingredients together and set aside. Roll out two balls of the dough into a circle shape. Place a handful of the potato mixture on one rolled out dough and place the other like a sandwich. Now heat the stuffed paratha on a hot pan for 30 seconds on each side. Spread 1tsp of olive oil on each side of the partha and cook for a further 1 minute on each side. Serve with a fresh mint and yogurt dip.
You can use any desired vegetable mixture in your stuffed parathas. Get creative with your flavour and remember to think out of the box. Enjoy!
