Vegetable Poha| Pohey| Quick and healthy breakfast recipe

Poha is an Indian snack, prepared in different states of India.
Poha is made of processed flattened rice (beaten rice), roasted with green chilly, onions, cumin seeds, curry leaves, mustard seeds
etc.
It is a high carbohydrate, low fat, healthy and quick meal that can be made in few minutes.

Cooking Time – 13-15 mins
For three persons

INGREDIENTS:
Poha (पोहा) 150 gram
Cooking Oil (तेल) 2 tablespoon
Cumin Seeds (जीरा) 1 teaspoon
Mustard Seeds (सरसों) 1 teaspoon
Curry Leaves (करी पत्ते) 10-15
Onion (प्याज) 1 medium sized
Green Chilies (हरी मिर्च) 3 medium sized
French Beans (फ्रेंच बीन्स) ½ bowl
Green Peas (हरी मटर) ½ bowl
Capsicum (शिमला मिर्च) 1 medium sized
Red Bell pepper (लाल शिमला मिर्च) 1 small sized
Peanuts (मूंगफली) 100 gram
Turmeric powder (हल्दी) 1/2 teaspoon
Salt to taste

Cooking steps:
1. Wash the Poha with the water, then drain the water from the Poha and keep it aside
2. Turn on the flame and heat the kadhai, then pour some cooking oil in the kadhai.
3. Once the oil is heated, then add cumin seeds, mustard seeds, curry leaves, green chili, chopped onion in the warm oil and stir all the things properly for few seconds.
4. Then, add turmeric powder, French beans, green peas, capsicum, red bell pepper and mix all the things properly.
5. when all the things are cooked properly, add peanuts, soaked poha and salt to taste in the kadhai and mix all the things properly, and cook all the things for 2-3 minutes on the low flame.
6. Then, turn off the flame and take out the Poha in a serving plate
7. Then garnish the Poha with chopped onion, fibre sev, green coriander leaves and with the slice of lemon
