Hope this finds you well & hanging in there!
If you are in the kitchen cooking up all the recipes a bit more than usual, maybe you can find some inspiration here for something new to try for you & your family!
Here’s what you’ll see in this video:
– steak & broccoli cauliflower casserole
– gyros (sooo good & from a box kit – easy peasy!)
– buffalo chicken dip
– shrimp alfredo
– orange chicken, fried rice, mini-eggrolls in the air fryer
– skillet apple pie
Broccoli Cauliflower Casserole
1-2 broccoli crowns
1 head cauliflower
Chop to desired size pieces & boil in salted water til fork tender.
Drain.
Stir in 4-6 oz Velveeta cheese, cubed.
Place in casserole dish.
In separate bowl, melt 1/4 stick butter.
Add 1 & 1/2 sleeves of Ritz crackers, crushed.
Mix til crackers are coated.
Spread evenly over broccoli, cauliflower, & cheese mixture.
Top with foil and bake for 20 minutes.
Remove foil and bake for 10 additional minutes til crackers are golden.
Buffalo Chicken Dip (my personal recipe)
2 cups shredded chicken
2 8 oz blocks cream cheese
1/2 c sour cream
1/2 c shredded cheese
1 envelope dry ranch dressing mix
1/2 stick butter
1/2 c buffalo or Louisiana hot sauce
In microwave (or on stove top), melt butter.
Add softened cream cheese & mix well.
Stir in all other ingredients except for the shredded cheese.
Put in casserole dish coated with cooking spray.
Top with shredded cheese.
*Sprinkle with dried parsley for a pop of green.
Bake for 20 minutes at 350.
Serve with tortilla chips, ritz crackers, or fresh veggies.
*all amounts can be adjusted a bit – easy to adapt here or there
Skillet Apple Pie
