In this video, I will show you how to make traditional sambar. This is a different style of sambar, and it has a different taste than quick sambar. This recipe takes a little longer than normal sambar, but in the end, it tastes amazing! You won’t forget the taste.

INGREDIENTS FOR SAMBAR
⁃ 3/4 cup of toor dal
⁃ 1 medium sized carrot
⁃ 2 sticks of celery
⁃ a few beans
⁃ Almost 2 drumsticks
⁃ 1 tbsp of tamarind
⁃ 1 and 1/2 tbsp of sambar powder
⁃ 1 tsp of turmeric
⁃ 2 tbsp of oil
⁃ 2 tsp of sugar
⁃ 1/2 of a big size onion
⁃ 2 medium sized tomatoes
⁃ salt according to taste

INGREDIENTS FOR SEASONING

⁃ 2 tbsp of oil
⁃ 1 tsp of cumin seeds
⁃ 1 tsp of mustard seeds
⁃ Few curry leaves
⁃ 1/4 tsp of asafetida

METHOD

In a pressure cooker or instant pot cook toor dal with 1/2 tsp salt, 1/4 tsp turmeric ,
2 cup of water and cook it nicely or up to 2 whistles. Soak 1 tbsp of tamarind in lukewarm water. Now cut your vegetables (whatever is available at home). Heat a pan, add 1 tbsp of oil and add all the vegetables. Sauté for 2 to 3 minutes or till all water is evaporated. After that add 1 tsp of salt, 1/4 tsp of turmeric and 3 cups of water. Now cover the pan and cook for 10 minutes or till the vegetables are cooked. Then add cooked dal to it.

Now heat another pan, add 1 tsp of oil, then add onion and tomato to it. Cook it till tomatoes are soft and then add sambar powder to it. Cook for another 2 to 3 minutes in low heat.

Now add above mix to dal and vegetables. Add tamarind pulp and mix nicely. Cover the pan and cook on low heat for another couple of minutes.

For seasoning, heat a pan and add oil . Now add asafetida, curry leaves, mustard seeds, cumin seeds and and allow it to crackle nicely and then add the seasoning to sambar. Now our sambar is ready to serve
