Recipes to some of my favourite foods while on my weight loss journey of over 250lbs.

Healthy food doesn’t need to be bland or boring.

*Banana, Peanut Butter and Protein Muffins*

Prep Time 5 mins – Cooking Time 13 mins
Will last a good week in the fridge.

These are brilliant for breakfast or a mid afternoon snack. Full of good carbs ✅, good fats ✅ zero processed sugar ✅ and a decent hit of protein which is the most important macro nutrient while trying to lose weight.

Makes 6 muffins

3 Ripe Banana’s
180g Oats
60g Peanut
60g Honey
40g Sultanas
60g Protein Powder
1 1/2 tsp Vanilla Essence

Kcals 270
Protein 19g
Fats 9g
Carbs 45g

1. Blitz banana, peanut butter, honey and Vanilla essence until smooth.
2. Add Oats and Protein powder then pulse until mixed.
3. Add Raisins and pulse again a couple of times
4. Leave to stand for 10 minutes then divide mixture evenly between muffin cases.
5. Bake at 180c for 13 minutes.
