Hello beautiful peoples and welcome to another recipe video. I thought it would be nice to share with you three easy recipes using this humble pantry staple. Below you’ll find all of the measurements to make the recipes shown in the video. The last burger recipe is from my own e-cookbook ‘Travel to Table’ 🙂 You can pick up your own copy on my website:
Here is the blog post on oats I wrote and mentioned in the video if you’d like to read about some more of the benefits and versatile uses of them 🙂
Black bean burgers (vegan)
1 red chili, minced
1 14oz can black beans, rinsed and dried
1/2 tsp paprika
1/2 tsp ground cumin
1 tsp garlic powder
10 g cilantro, chopped
50g oats, pulverized (*you may need a little less depending on how much you dried your beans)
2 T olive oil
Avocado slices, salsa, cheese to top
Mix all of the ingredients above (minus the olive oil) in a bowl. Form 3 patties and place in the fridge to firm up for at least 10 minutes. Fry the patties in the olive oil on each side on medium heat for about 3-4 minutes or until just golden and warmed through. Serve with desired toppings and enjoy!
Banana oatmeal cookies
2 very ripe bananas, mashed
1.5 cups rolled oats (150g), half pulverized for a smoother texture
1/3 cup (50g) chocolate chips (or a cut up chocolate bar)
pinch of salt
1/2 tsp cinnamon
1/3 cup (40g) raisins, chopped
Mix all ingredients in a bowl. Form 7-8 cookies, making sure to make them into cookie shape as they won’t rise in the oven. Bake at 350F/ 175C for 12-14 minutes until just golden.
Overnight oats base
1/2 cup (50g) rolled oats
1 cup (100ml) milk of choice
1 T chia seeds
1 T honey or maple syrup
pinch of salt
Combine everything in a glass jar or container of choice, mixing well. Leave to sit in the fridge for at least 2 hours or ideally overnight. Top with whatever you’d like (I used pumpkin seeds and blueberries) and enjoy!
Thank you all so much for watching and until next time!
Xoxo,
Alexandra
