My #quarantine coping mechanism has been baking banana bread. I found this recipe and adapted it a little bit:

Here’s what I did/used!

WET ingredients:
2 mashed very ripe/brown bananas (BUT I recommend using 4!)
2 tbsp ground flaxseed
1/3 cup almond milk
1/3 cup melted coconut oil
2 tbsp pure maple syrup
2 tsp pure vanilla extract
3 tsp cinnamon

DRY ingredients:
1/4 cup plus 2 tbsp coconut sugar
1/2 cup rolled oats
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp fine sea salt
1 1/2 cups whole grain oat flour

Topped with walnuts & vegan mini chocolate chips.

Bake for around 47 min at 350 degrees F!
