When it comes to cooking at home, “quick” and “easy” have become my two favorite words, but that does not mean that I have to sacrifice it being “delicious” or “healthy.” Well… sometimes that’s just about balancing out how much butter I want that day.

Honestly, the Instant Pot did most of the work with this one, and that’s okay. Sometimes I just need a no-fuss dinner that the whole family will love, and this is it! My boys loved that they could choose exactly what they wanted to pair with their fajitas. It gave us all the restaurant-feel that we’ve missed.

Recipe:

Ingredients for shredded chicken

1 packet of pre-prepared chicken fajita meat (3 pounds)
1/2 cup of water or chicken broth or mix the both if you don’t have enough
1/2 – 1 small red onion – sliced
6-8 stalks of green onion
3 cloves of crushed garlic
6 peppercorn

Add all of the above to the Instant Pot as is. You do not need to cut the chicken. Close the lid, and put in sealing mode. Cook on manual for 12 minutes.

Release the steam. When done, open carefully.

Remove the cooked chicken and place on a cutting board. I love to use an oversized one which I later turn into a serving station.

Use two forks to shred into bit sized shredded chicken.

Once you’re done shredding, this delicious chicken is ready for quesadillas, tacos, fajitas, chicken salad and so much more!

This meal is absolutely quarantine approved. With restaurants now opening up their dine-in experiences under strict social distancing rules, I encourage you to still stay at home as often as you can.
