Healthy Caesar Salad
serves 3
3 heads Romaine Lettuce, chopped
For the Dressing –
4 Garlic Cloves, skins on
2/3 cup Almond Milk
2/3 cup raw, unsalted Cashews
1 1/2 Tablespoons Nutritional Yeast
1 Tablespoon plus 1 teaspoon fresh lemon juice
2 teaspoons Dijon Mustard
fresh cracked black pepper
1/4 teaspoon Kelp Powder
Preheat oven or toaster oven to 350 degrees. Wrap garlic cloves in aluminum foil. Place in oven and roast 20 minutes. Remove from oven and let cool. Peel garlic and place in blender jar. Add remaining ingredients and blend until smooth.
For the Croutons –
3 slices Ezekiel Sprouted Grain Bread, cubed
Bragg’s Liquid Aminos or Coconut Aminos
3/4 teaspoon dried Basil
3/4 teaspoon dried Oregano
3/4 teaspoon Garlic Powder
3/4 teaspoon dried Minced Onion
1 1/2 teaspoons Nutritional Yeast
fresh cracked Black Pepper
Preheat oven or toaster oven to 250 Spray the bread cubes lightly with the liquid aminos and toss in all of the seasonings. Spread them in a single layer on a foil lined baking sheet. Bake for 30 minutes, stirring at 10 minute intervals. Let cool.
For the Salad –
Place chopped lettuce in a large bowl. Add dressing and toss until well distributed. Add croutons and toss again. Enjoy!!
