Chia Berry Jam
Ingredients –
• 1 cup fresh or frozen strawberries (washed and sliced)
• 1 cup of fresh or frozen raspberries (washed)
• 3 tbsp honey (+1 more tablespoon if you have a sweet tooth)
• 3 tbsp chia seeds
Instructions –
Heat your saucepan over medium heat and add the strawberries, the raspberries and the honey and stir constantly.
Once the berries have softened use a potato masher to mash the berries. Let the mixture come to a slow boil, then add the chia seeds.
Turn the heat down to a low heat and continue stirring the mixture for about 10 minutes, then remove the pan from the stove let the jam sit for 5 to 10 minutes to cool to room temperature.
If you like your jam a little chunky, then you’re finito! Pour your jam into a mason jar and cover it tightly with a lid. Or you can add the mixture to your blender for a quick blitz before popping it into the jar for a smoother jam.

Please note – Because this jam has no preservatives I would consume the jam within 5 to 7 days, you could add a little lemon to help with the shelf life however this will make the jam a little tart.
