Healthy, Easy, Budget-Friendly Lunch or Dinner Meal//Rice with chicken spinach sauce. An incredibly flavourful Chicken recipe made with spinach and a blend of spices.

Servings 4 servings
Ingredients
* 1 chicken breasts, chopped with 1 tablespoon Rosemary and a little salt
* 24 oz frozen spinach
* 2 tbsp coconut oil
* 1 chopped small onion
* 3 garlic cloves, minced
* 2 tsp ground pepper
* 2 tsp ground cumin
* 1.5 tsp salt
* 1 tsp ground ginger
* 1/2 tsp nutmeg
* 1/2 tsp cinnamon
* 1 cup of Rice
Instructions
1. Put Rice on fire, while doing other stuff and, chopped chicken breasts and 1 tablespoon Rosemary and a little salt.
2. Chop garlic and onion. Add to a pan over medium heat with coconut oil and little browned.
3. Add chicken breast to the pan. Add in all spices and stir well to combine. Place lid on top and cook for a few more minutes until chicken is cooked through.
4. Add spinach in the pan, pop the lid back on, and let them thaw and cook, and stirring every few minutes. Alternatively, you can use fresh spinach instead. If you use baby spinach, you’ll need to add it to pan in increments as it needs time to wilt down.
5. Once the spinach is fully thawed, keep the lid on and continue to cook over medium-low for about 25-30 minutes, stirring now and then.
6. Once fully cooked, soft chicken and a nice thick, leafy spinach sauce. Serve over cooked rice.
