Week of 4/26/2020
Sunday is grocery and food prep day. I “prep” for six days a week: for hubby’s breakfast I make mushroom/onion scrambles or tacos and throw in various other veggies & seasonings. For his lunches I divide the strawberries & blueberries into 6 small containers for his lunches (fruits vary from week to week & he also takes a banana or two and an orange every day). For his main lunch dish I make some kind of (not creamy) pasta salad or quinoa salad and divide it into 6 portions. I usually make his lunch with pasta, green olives, black olives, onions, grape tomatoes, Italian dressing, bac’n bits, and sometimes banana peppers. It really depends on what we have at home and what is available at the grocery store.
At the moment it is just me, hubby, and his mom part time. For breakfast I’ll make Mom oatmeal, yogurt, and an orange/banana and I’ll have avocado toast or plain toasted sourdough. For mine & Mom’s lunches I will be making us salads or sandwiches since I have 6 heads of romaine lettuce. I will use the cucumbers and tomatoes for the salads along with various Kendra’s Kreations pickles.
Dinner was a mix of the veggies we had and some of the new ones. During the week I cook very easy dishes. On the weekend we may order take out one day and one day I’ll cook a “fancy” meal that requires more effort, time or more homemade portions of the meal.
The previous week I picked up the 2 lb bag of Gardein Crispy Tenders and an 8 pack of Beyond Meat Patties. Since I still had a lot we ate on them this week.
As you can see since I had a lot of green beans we ate green beans a lot. I cook with what I have on hand based on what is on sale, looks good, or is actually available at the store/market.
