Carrot Salad Ingredients and Recipe: Serves: 2

Ingredients:
– 2 cups shredded carrots
– 2 tsp. olive oil
– Juice from ½ lemon
– ¼ tsp. ground cinnamon
– ¼ tsp. ground ginger
– Pinch of sea salt
– 2 pitted Medjool dates, finely chopped
– 2 tbsp. chopped cashews

Step 1: Start by washing your carrots and pat dry. Grate and set aside.
Step 2: Combine the shredded carrots and olive oil.
Step 3: Squeeze in the lemon juice and add the cinnamon, ginger, and salt. Toss to combine.
Step 4: Fold in the chopped dates and cashews and mix well.
