FRIED RICE RECIPE:

1-2 tablespoons sesame oil
2 eggs, whisked
2 medium carrots, peeled and diced (or use frozen or canned)
1 small white onion, diced (or use frozen or canned)
1/2 cup frozen peas (or use frozen or canned)
3 cloves garlic, minced (or powdered garlic)
salt and black pepper
2 cups pre-cooked rice
3 green onions, thinly sliced (optional)
3–4 tablespoons soy sauce, or more to taste
2 teaspoons oyster sauce (optional)

1. Add 1 tablespoon sesame oil to the pan. Add carrots, onion, peas and garlic, and season with a pinch of salt and pepper. Sauté for about 5 minutes or until the onion and carrots are soft. Immediately add the rice, green onions, soy sauce and oyster sauce (if using), and stir until combined. Continue stirring for an additional 3 minutes to fry the rice.
2. Heat ½ tablespoon olive or sesame oil in a large sauté pan over medium-high heat until melted. Add egg, and cook until scrambled, stirring occasionally. Add egg to rice mixture.
3. Remove from heat and enjoy!
