Herby Tomato Penne Pasta by Clean Eats Charlotte | Quick, Easy + Healthy Recipes
Hey everyone! In today’s video I am sharing with you all one of my favourite recipes. This tomato pasta dish is one you’re going to absolutely LOVE and I can’t wait to see your recreations!

RECIPE:
Ingredients
1 serving of penne pasta (follow pack instructions)
8 plum tomatoes (halved)
230g tomato passata
1 1/2 tbsp tomato paste
1 garlic clove
1/2 tsp dried basil
1/2 tsp dried rosemary
1/2 tsp dried sage
1 tbsp rapeseed oil
salt + pepper
Method
Bring a pan of water to the boil, add a pinch of salt and cook the pasta according to the packet instructions (usually takes around 10-12 minutes to cook).
In the meantime whilst the pasta is bubbling, add the oil to a hot saucepan. Add the herbs and cook them out to release the flavour. Crush and finely slice the garlic. Add to the pan.
Still on a high heat, add the tomato paste, passata and plum tomatoes. Reduce the heat to a medium heat and simmer. Add a pinch of salt + pepper and stir.
Drain the pasta once cooked and add it to the sauce in the saucepan. Stir well.
Serve in a pasta bowl and sprinkle with salt + pepper. Finish with a sprig of rosemary if you want to be fancy!
