2 Tbsp olive oil
2 cups squash – thinly sliced
2 cups frozen corn
1 cup green bell pepper – chopped
½ cup diced onion
2 tsp minced garlic
1 can black beans – drained
1 cup diced fresh tomato
2 Tbsp diced green chili
1 Tbsp dried parsley
salt and pepper to taste
In large nonstick skillet, heat oil over medium heat. Add squash, corn, bell pepper, onion and garlic. Cook, stirring often, until vegetables are tender, about 5 minutes. Add beans, tomato, green chili and parsley. Stir together for 2-3 more minutes. Transfer stir-fry to large bowl, salt and pepper to taste, and serve.
