Rainbow Sandwiches are a favorite Sri Lankan (Formerly known as Ceylon) party food. So easy to make, it’s tempting and colorful. This recipe has the same influence but I have substituted Lettuce with boiled and mashed frozen Green Peas.
Most families have their family recipes for making Rainbow Sandwiches. Some will add a little sugar.
This is how it’s made in my family. I choose to leave out added sugar as the all the vegetables in this recipe have their natural sweetness. So it is a personal preference.
Typically Rainbow Sandwiches are cut diagonally to make triangular shape or cut as squares.
I have made them in to bite sized pinwheels for added fun. The bread used is regular white sandwich (soft) sliced bread, as traditionally used.
