Pinwheel Sandwiches 3 ways
Serves 4-6
Ingredients
White Bread 6 slices
For Veggie Mix
4tbsp mayonnaise
4tsp heavy cream
Chopped green chilli – to taste
1/2 chopped bell peppers/or cucumbers
1/2 spinach
For Egg Mix
4tbsp mayonnaise
4tsp heavy cream
Chopped green chilli – to taste
2tbsp spring onions chopped
2 hardboiled eggs
For Chicken Mix
4tbsp mayonnaise
4tsp heavy cream
Chopped green chilli – to taste
1/2 cup cooked shredded chicken
Prepare your sandwich filling by mixing the all the ingredients well. Set aside. Cut the crust off of the bread slices an gently roll them to flatten and lengthen with a rolling pin. To assemble, lay out a piece of clear saran Wrap. Next, lay two pieces of the rolled out bread so each piece is slightly overlaying the next. Add greens of choice (we used spinach) and add your filling. Spread it out thinly and evenly. Gently roll your sandwiches and then roll the wrap over top. Seal the sandwiches and refrigerate them for 30 minutes. Take them out after 30 minutes, un wrap and slice to reveal pinwheels. Serve cold.
Bonus*
Masala Chai
Yield 1 cup
1cup of hot water
1-2 teabags
2 cardamom
1 cinnamon stick
Gurd/sweetener-to taste
1-2tbsp milk
Play all ingredients in pot of choice. We have used a handy made of clay. Mix well and let brew for a couple of minutes. Serve hot.
