Quinoa is one of my favorites for meal prepping healthy vegan lunches and I definitely like to make big batches of quinoa so it’s ready for quick and easy lunches like these ones!

—-DETOX QUINOA BOWL—-
1/2 – 1 cup cooked quinoa (I used red)
1/4 cup chopped red onion
1/4 cup chopped red pepper
1/4 cup chopped walnuts
1/2 ripe avocado chopped
DRESSING:
juice from half a lemon or lime (about 1/2 TBSP)
pinch of black pepper
1/8-1/4 tsp onion powder
1/2 TBSP olive oil (OPTIONAL)

DIRECTIONS:
cook quinoa, chop the rest of the ingredients (can meal prep all of this in advance except the avocado, add that the day you are planning to eat)
mix dressing in a small bowl and pour over top, mix everything up and enjoy.

BLOG POST WITH LARGER RECIPE PORTIONS:

—-SUPERFOOD QUINOA BOWL—-
1/2 – 1 cup cooked quinoa (I used mixed color)
1/3 cup broccoli
1/4 cup red onion
1/4 cup chopped red pepper
baby kale or spinach optional
DRESSING:
half of a lemon or lime juiced (about 1-2 TBSP)
pinch of black pepper
1/2 tsp mustard
1/8 tsp onion powder
1/2 TBSP olive oil (OPTIONAL)

DIRECTIONS:
cook quinoa, chop veggies and then either steam or sauté them whichever you like best.
mix dressing in a separate bowl and pour over the top.

BLOG POST WITH LARGER RECIPE PORTIONS:

—-CURRY QUINOA—-
1/2 – 1 cup cooked quinoa + cooled

SPICES 1/8 – 1/4 tsp each depending on flavor desire:
Curry, paprika, turmeric, cayenne, black pepper

SERVE WITH any veggies you like, I used:
broccoli
chopped red onion
chopped mushrooms
1/2 a ripe mashed avocado on top optional
Lemon slices optional

DIRECTIONS:
cook quinoa in advance so it is cooled, add quinoa and spices to a skillet mix well, add in chopped veggies and sauté until fragrant.
Serve everything together. OPTIONAL add mashed avocado and lemon slices on top if desired.
