This is a great way to get the kids to eat fish! Highly nutritious burgers made with quality ingredients. Salmon and haddock are packed with protein and fish oils that are vital for healthy bones and overall health. Reduce the carbs by substituting the wholemeal baps and fries with a salad and vegetables steamed with spices, for a meal full of taste!

To make 6 burgers

200g fresh salmon – remove skin and bones
200g fresh haddock – remove skin and bones
1 egg
4 spring onions
handful of coriander
handful of baby spinach leaves
Juice of half a lemon
salt and pepper to taste
6 wholemeal baps

1. Place the cod and half the salmon into a blender with the egg and lemon juice, then blend to a paste.
2. Dice the remaining salmon into small cubes, then mix it into the blended fish, along with the spring onions, coriander, spinach, salt and pepper. Combine well for best results.
3. Divide the mixture into 6 and form each into patties or burgers.
4. Fry using a little olive oil till golden brown on both sides, approx 3 minutes on each side.
5. Serve with warm wholemeal baps, salad and home made fries.
For a low calorie meal, replace baps and fries with more salad and mixed vegetables.

Salad – fresh green salad leaves, tomatoes, cucumber, olives, radishes, red onion.

Home made dressing – olive oil, honey, salt, pepper, lemon juice.
