Chilli con Carne – Low-calorie recipe for only 657 calories

Great, tasty dinner idea for dieting.
No restriction, good food only. Quick and easy to prepare, no messing around.

(Serves 5 people )

Ingredients:

250 g White long grain rice (800 calories)
2 Medium onions (40 calories)
500 g Mince beef 5% (840 calories)
1 Chilli con Carne flavour mix sachet (163 calories)
400 g Chopped tomatoes (94 calories)
400 g Kidney beans (356 calories)
120 g Light grated medium cheddar cheese (336 calories)

Directions:

The rice

I like easy, so in this recipe, I have used boil in the bag, easy to cook long grain rice.
Alternatively choose to mix 1 bag of white and 1 bag of brown rice to add some fibres to your meal. Also, don’t forget to adjust the cooking time as brown rice cooks for longer than white rice.

Pop 2 sachets of rice in boiling water, and they are ready in about 20 mins.

In the meantime, you can get the sauce ready

The sauce

Start with dicing the onions, and cook them on low heat. Add a few sprays of fry light oil, and if needed add a little amount of water to avoid sticking and burning the onions.

Next, add the minced beef and gently cook until you see no more pink area in the meat.

At this stage, I add the flavour sachet and carefully coat the meat with it. I have used Colman’s full of flavour chilli con Carne. They have a hot and mild version for you to pick.
Ready-mix sachet, means you don’t have to mess with the spices and herbs yourself. Its all perfectly balance for a constant Mexican experience and it makes cooking so easy.

Once the meat is fully coated, don’t delay. Add the chopped tomatoes.
Now let it simmer for a bit.
Time for the tomatoes to melt in and create a smooth and unctuous sauce

Is your rice ready to drain? Perfect, it means it’s now time to add the kidney beans and cheese, stir a little and then drain the rice.

You might set the cheese aside if you prefer to add it later directly onto your plate.

Add the rice first and spoon the chilli sauce on top. Optionally why not add a few leaves of chopped coriander?
