Instant Jilebi:

Ingredients:
Skinless black lentils (urad dal)- 100 grms
Maida flour-250 grms
Eno powder-2 sachets
Baking powder-1 tbsp
Sugar- 250 grams
Jaggery(coarse brown sugar)- 200 grams
Kesar food color-1 pinch
Saffron-1 pinch
Ghee-2 tbsp
Lemon-1
Water-1/4 th cup
Oil for shallow fry

Process:
Take 200grms of skinless black lentils in a mixy jar ground it to a fine powder. In a big vessel add one cup of maida flour. for one cup of maida flour add 4 tbsp of black lentils powder.add 1 tbsp of baking powder,2 sachets of eno powder. here we have used eno powder for fermentation.now add two tbsp of ghee. mix all the ingredients finely. now add little water and make the flour to a tight batter.use water gradually. Keep the batter aside for marination about 1 hour.
Take a thick vessel on a low flame add one cup of jaggery and one cup of sugar add one cup of water and stir for a couple of min.
Add Kesar or orange food colour to the syrup. cook for 20 min on a medium flame.
Add saffron to the syrup.cook until the syrup becomes to a mild strings of jaggery as I have shown .keep this syrup aside.
Take the marinated jalebi batter into a polythene cover.cut to the corner.
Now place the syrup beside with a spatula for dipping the fried jalebis.
Press the marinated batter into a pan containing boiling oil.press the batter to a round spiral shape into the oil.reverse the jalebis and fry them to a light golden brown in colour.take out from the oil and dip the jalebis into the jaggery syrup.
Keep them underneath of the syrup placing a spatula about 3 min.
Take out and serve with flakes of dry fruits.
