1 Can of Five Bean or Kidney Beans,
1 Can of Chopped Tomatoes,
1 Onion,
2x Red Chilli,
1x Garlic Clove,
2tbs Tomato Puree,
1Tsp of Cumin,
1Tbs of Chilli Powder,
1 Vegetable Stock cube,
Recipe 2, Sweet Potato Shepherds Pie:
1tbs Coconut Oil,
2 Small Onions,
2 Carrots,
1 Garlic Clove,
500g Lean Mince,
1tbs Tomato Puree,
4 Sprigs of Thyme,
400ml Stock,
1tbs Worcestershire Sauce,
1kg Sweet Potato,
1 Leek.
Recipe 3, Chicken, Chickpea and Tomato Soup:
500g Ripe Tomatoes,
1 Small Red Onion,
2 Garlic Cloves,
750ml Fresh Chicken Stock,
1x 150g Chicken Breasts,
2tbs Tomato Puree,
Small Bunch of Basil,
1x 400g Tin of Chickpeas.
