Multimillet Gobi Paratha
Ingredients for Paratha:
2/3 cup of multi millet atta
1 cup of wheat flour
1 cup of grated gobi
1 medium chopped onion
3 Chopped green chillies
1 tbsp ginger garlic paste
½ tsp salt
½ coriander powder
½ cumin powder
½ garam masala powder
½ tsp red chilli powder
½ tsp amchur/dry mango powder
½ tsp carom seeds
1 tbsp of Kasuri methi
2 tbsp of mustard oil
Method
Step 1: Mix 2/3 cup of multi millet atta and 1 cup of wheat flour in a bowl and knead it with the right amount of water.
Step 2: Apply some cold-pressed oil on the dough to make the paratha soft and leave it for half an hour
Step 3: Heat the pan and put 2 tbsp of mustard oil.
Step 4: Heat the oil completely and lower the flame
Step 5: Put medium chopped onion and fry it for 2-3 minutes
Step 6: Add 3 chopped green chillies
Step 7: Add 1 tbsp ginger garlic paste
Step 8: Add ½ tsp salt, ½ coriander powder, ½ cumin powder, ½ tsp red chilli powder, ¼ of turmeric powder
Step 9: Cook all the masalas nicely for 3-4 minutes
Step 10: Add 1 cup of grated Gobi
Step 11: Mix everything nicely and cook for 5 minutes
Step 12: Add Kasuri methi and carom seeds
Step 13: Cool it down for a while
Step 14: Take a small portion of dough and stuff the masala gobi
Step 15: Roll the staffed dough and give it a shape of paratha
Step 16: Apply some ghee in the pan and place the paratha
Step 17: Cook the paratha for 3-4 mins on one side
Step 18: Flip the paratha on the other side and cook it for another 4-5 mins
Step 19: Cook the other paratha with the same method.
Green chutney for paratha
Step 1: Take the mixer bowl
Step 2: Mint leaves, coriander leaves, green chillies, black salt, lemon juice, roasted Bengal gram dal
Step 3: Make a nice paste of it.
And the gobi paratha is ready to serve with chutney.
