Ingredients list for today’s Lunch:
– 5 cups of cooked lentils (plain)
– 12 oz of fusilli brown pasta – the weight is before cooking (any brand of fusilli pasta should work)
– 1/2 to 1 can (7 to 14 oz) of coconut cream – depend on how creamy you want it ( I use 1 can)
– 1/3 of a large celery
– 1/2 medium size onion
– 5 cloves of garlic
– 3 tablespoons of chopped parsley
– 1 vegetable bouillon cube (optional)
– 2 teaspoons of smoked paprika
– Salt (as desired)
Roasted Brussel sprouts:
– 18 brussel sprouts
– 1 tablespoon olive oil
– 1 tablespoon of balsamic vinegar
– 1/4 to 1/2 teaspoon of cayenne pepper
– 1 teaspoon salt
