INGREDIENTS:
1. 1 cup pointed gourd / parwal
2. ½ cup potato
3. ½ cup long beans / borboti
4. 1 cup pumpkin
5. ½ cup carrot
6. 2 cup papaya
7. 1/4th cup oil
8. 2-3 piece dry red chili
9. ½ cup chopped onion
10. 1 tsp ginger garlic paste
11. ½ tsp turmeric powder
12. 2 tsp salt
13. 6-7 piece green chili
PROCEDURE:
1. Here I take various types of colorful vegetables. I try to take all in same size.
2. Heat oil in a cooking pan. Drop dry red chili. Stir and fry for a few seconds. Add chopped onion. Stir onion with oil. Fry onion till transparent colour.
3. Next add 1 tsp ginger garlic paste. Stir and fry for a minute to remove its raw smell.
4. Add turmeric powder and salt with oil and onion. Stir for a few seconds.
5. Now add washed papaya, potatoes, long beans, pumpkins, carrot and parwal or pointed gourd. Stir and mix all properly. Keep flame high in this time. Because enough water will drain from vegetables. We have to dry this in high flame. So in high flame cook around 8-10 minute or till water dry out.
6. Stir vegetables and check that there is no more remaining water in vegetables. Now add green chilis and mix all. Then cover pan in low flame for 10 minutes.
7. 10 minutes later, open the lid. Stir all vegetables. Check that vegetables still not cook well. So again cover pan for 5 minutes to tender properly and make vegetables fry.
8. Open the lid 5 minutes later. Stir and check that all vegetables like papaya, potatoes sodden properly. And also salt is perfect. So healthy colourful vegetables bhaji is ready to serve with not only rooti, paratha but also with rice.
