Oat Mixture:
1 + 1/2 cups old fashioned oats
1/2 cup oat flour (grind oats in a processor)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
2 tbsp granulated sweetener (stevia or monk fruit)
1/4 cup unsweetened applesauce
3 tbsp almond butter (or other nut butter)
1 tsp vanilla extract
1 cup unsweetened almond milk (or other milk)
1 large egg, beaten

Filling:
2/3 cup blueberries
1 tbsp granulated sweetener (stevia or monk fruit)
1 tbsp chia seeds

Optional: Drizzle with honey or top with fruit!
