Hummus-
Ingredients:
2 tablespoons tahini (sesame seed paste)
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1 clove garlic
1/2 teaspoon salt
15 ounce can chickpeas, drained and rinsed
1/4 cup roasted pine nuts
1/4 cup warm water
Dried parsley, olive oil, and pine nuts for garnish if desired

Power Salad-
Ingredients:
1 cup dry quinoa
2 medium avocados
3 oz. baby spinach
8 oz. cherry tomatoes
half diced onion

{For the dressing}
1-2 cloves garlic, minced (I use 2)
2 Tbsp. red wine vinegar
2 Tbsp. olive oil
1/8 tsp. salt

Turkey Lettuce Wrap-
Ingredients:
Iceburg lettuce
cucumber
hummus
roasted turkey
