Being an Indian living Abroad , I have always enjoyed Mexican Cuisine which has lot of vegetarian options , Healthy alternatives and ample use of Rice and spices in their cooking unlike a lot of Fast foods available around. During this Lockdown period I have attempted to recreate my favorite Chipotle Burrito Bowl and happy with the end results.Hence sharing you the recipe.
