INGREDIENTS:
300 gms Whole Wheat Flour
200 gms Butter
3 Cups Liquid Jaggery
5 Eggs
100 gms Fine Ground Almond
50 ML Brandy
Soaked Fruits- Raisins, Almonds, Dried Berries(100-150 gms)- Keep them soaked in brandy or orange juice for 4-5 days before using in the cake
50 gms Cashew
Nutmeg,Clove,Cinnamon Powder
METHOD:
1. Melt the butter using a whisker in a big bowl
2. Add the liquid jaggery and whisk well.
3. Add the eggs two at a time and whisk.
4. Once it becomes a smooth mixture, add the ground almond.
5. Sift the Wheat Flour in portions and add to the liquid mix.
6. Fold in the mixture using Cut and Fold Method.
7. Add the Soaked Fruits, Cashews and give it a good mix.
8. Add the spiced powder.
9. Pour the mixture in a lined baking tray and bake for 40-45 minutes at 180 degrees.
10. Pour brandy on the hot cake and serve !
