This is one of my favorite “no recipe recipes” perfect for busy days. We LOVE it with my THAI NO-PEANUT SAUCE:
DIRECTIONS:
1) Microwave (or steam) your favorite veggies – I like broccoli, shredded purple cabbage and shredded carrots, drain and pour into a large bowl.
2) Add drained canned fruit. I use a 20 ounce can of pineapple in it’s own juice, I have also used mango and Mandarin oranges.
3) Add a bag of fire roasted bell peppers and onions. Mix well.
4) Microwave a bag of rice, or cook from scratch.
5) Serve veggies over rice, and your favorite. sauce.
