|| Simple Carrot Rice ||

This simple carrot Rice dish is easy, simple to make and less time consuming. It is healthy and very easy to pack as your school or office lunch so you can call it as healthy lunch idea. To take healthy front you can opt for brown rice or dalia (broken wheat) over white rice. This recipe incorporated with carrot which has lot of goodness, healthy benefits. So you can add this in your list as healthy lunches for kids or for you too.

Serve- 2-3 person

Ingredients:

Boiled rice- 3 cups
Onion- 1 medium, chopped
Carrot- 3/4 cup, grated
Cashew nuts- 8-10
Coriander- 2 tbsp, chopped
Mustard seeds- 1 tsp
Bay leaf- 1 medium
Curry leaves- 8-10
Cardamon- 2 small
Clove- 2 small
Cinnamon- 1/2″
Raisins- 8-10
Asafoetida- 1 pinch
Green chili- 2 or red chili- 1 tsp
Vegetable oil- 2 tbsp
Salt- as required

How to make it:

Boil the rice and keep it aside to cool it down.
Grated carrot in a manual grater or use a food processor to grate it.
Heat oil in kadhai or wok, and add mustard seeds.
After the crackling sound, add curry leaves, cardamom, cinnamon, clove and bay leaf one by one.
Let it cook for a while, then add asafoetida.
Add onion along with some salt to cook it faster.
After few minutes, add cashews and raisins. Cook it for 10 seconds.
Then add grated carrot, and cook until the color of the carrot changed.
Now add boiled rice and mix it properly. Add salt and red chili powder in it.
After few minutes, add some chopped coriander.
Serve it hot with some raita.
