A quick, easy, and wonderfully satisfying supper or dinner recipe is adapted from Bailey & Pattison’s Fast800 Recipe book and turns out delicious and mouthwatering. Mutton loin chops can be replaced with lamb loin chops but then you have to increase 40 to 50 calories depending on the size of the chops. Crushed minted peas add great flavor and make the meal wholesome. These feta-mixed peas can also be served with all types of BBQ. Toasted pine nuts add a unique taste in this crushed minted peas.
Recipe ingredients:
2 thick mutton loin chops (each around 175g)
1 tbsp olive oil
For the crushed minted peas and feta
200g frozen peas
1 tbsp olive oil
15g pine nuts, toasted (see 84)
1 red chili, deseeded and finely diced
10g fresh mint leaves finely chopped
50g feta
