Get a peek into what I eat in a day (fitness edition). I’m showing you three delicious, quick and healthy meals for weight loss in a healthy and holistic way. I have also mentioned in the video that I absolutely DO NOT promote starvation or skipping meals to stay fit and healthy or to lose body fat.

I truly believe in eating at regular intervals and including rich nutrient dense foods instead of looking at food as something made up of carbs, proteins, fats etc!

BREAKFAST: SABUDANA KHICHDI (Serves 4 people)

2 tablespoons cold pressed coconut oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
5 – 6 curry leaves
4 – 5 green chillies, slit lengthways (Adjust according to your heat preference)
1/2 cup peanuts, coarsely crushed
1 handful of coriander leaves, finely chopped
Salt to season
250 grams sabudana, soaked overnight

To serve: Chopped Coriander leaves, lime and green coconut chutney (all optional)

LUNCH: APPLE + CARROT OPEN FACED SANDWICHES (Serves 1 person)

FOR THE MINT CHUTNEY:
1 handful of mint leaves
1 handful of coriander leaves
2 cloves of garlic
1/4th knob of ginger
Salt to season
2 – 3 green chillies (Adjust according to heat preference)
1 teaspoon water or more depending on how liquid you’d like it to be.

To make the sandwich:
2 tablespoons yogurt
2 – 3 teaspoons mint chutney (or more based on your liking)
1 tablespoon raisins, soaked in water for 10 – 15 minutes
2 sliced of sourdough or any bread, toasted with ghee until crisp
1/2 apple, sliced
1 carrot, grated
mint leaves to garnish

DINNER: MASALA VEG + KIDNEY BEAN PULAO
2 tablespoons cold pressed coconut oil
2 teaspoons cumin seeds
1/4th inch cinnamon stick
2 cardamom pods
4 – 5 cloves
4 -5 curry leaves
4 – 5 green chillies, slit (Adjust according to heat preference)
4 cloves of garlic, chopped
1/2 inch knob of ginger, chopped
2 medium sized onions, finely chopped
2 tomatoes, finely chopped
2 carrots, sliced
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
2 teaspoons coriander powder
1 teaspoon cumin powder
1 teaspoon
1 cup rice, washed
1/2 cup kidney beans, soaked overnight and cooked in a pressure cooker until soft
2 cups + 1/4th cup water
1 tablespoon kasoori methi
1 capsicum, chopped
Coriander leaves, to serve
Lime juice while serving
Yogurt while serving
