This recipe is a perfect one for those warm Summer days when you don’t want to have a very heavy dinner. The recipe is loaded with lots of healthy vegetables and only a little cheese. Don’t be a slave in the kitchen – this is a very quick recipe to prepare and leave in the oven to cook while you get on with other activities in your life. A low calorie one too for those who are on a diet.
Ingredients:
450g Lamb steaks (You can use either chops or cutlets instead)
Few fresh mint leaves – chopped into very small pieces
7 Garlic cloves – chopped into small pieces
1 tea spoon Olive oil
1 Aubergine – chopped into cubes
2 Courgettes – chopped into cubes
7 Carrots – chopped into cubes
200g Salad cheese – chopped into cubes
10 – 15 Cherry tomatoes
Method:
Preheat the oven to 180C. Chop the mint leaves and garlic, then add one teaspoon of salt and mix well. Rub this on the steaks along with the olive oil.
Place the aubergine, courgette and carrots in an oven proof dish. Place the lamb steaks on top. Bake in the oven for 35 minutes.
Remove from the oven and top the steaks with the cheese cubes and the cherry tomatoes. Return to the oven for a further 15 minutes until the cheese just starts to brown and the lamb steaks are just cooked through.
Serve the steaks with the roasted vegetables and mixed leaf salad or boiled potatoes if you prefer.
