This homemade Oatmeal bread recipe is one of my favorite because of its nutritional value. It’s rich in proteins and fibers especially if they are made with honey. Perfect for sandwiches. It is soft, delicious and nutritious.
Prepared with easy steps.
INGREDIENTS
3 cups (361g) unbleached bread flour
1 cup (99g) of rolled oats
2 tablespooms of butter
1 teaspoon of salt
3 tablespoons (40g) of brown sugar or honey
2 tablespoons instant yeast
1 1/4 cups (283g) lukewarm milk
TOPPING
1 large egg white
1 tablespoon (14g) of cold water
1 to 2 tablespoons of rolled oats
EASY STEPS
1.Weigh your flour, spooning it into a cup, sweep off any excess flour
2.To make the dough, Mix all ingredients in a large bowl to form a rough, shaggy dough.
3.Knead the dough by hand or mixer until its soft about 5 to 7 minutes.
Don’t be tempted to put more flour if feel sticky, it will only make the loaf dry.
If kneading by hand, try to greased the work surface rather than floured surface.
4.Transfer the dough in lightly greased bowl, cover and allow rise at room temperature for 1 hour. Place the bowl of dough in your turned- off oven with the oven light on.
5.To shape the dough, transfer the dought to a oiled surface.Flatten it into a 6″x 8 rectangle. Fold the top down to the center,pressing it firmly with the heel of your hand to seal. Pull the upper left and right corners into the center,pressing it to seal.Repeat the first step (folding the top to the center and sealing) 3 to 4 times untill you’ve created a 9″ to 10 log. Tuck the ends under slightly, and turn the log over so its seam is on the bottom.
6.Place the log in a lightly greased pan and cover of your choice. Allow the dough to rise for 1 1/2 hours until it’s crested about 1″ over the rim of the pan.
7.*Preheat your oven to 350F.
To add.the topping, uncover the risen loaf. Beat the egg white with cold water.Brush the beaten egg all over the top crust.(you won’t need it all)and then sprinkle with the rolled oats
8.Bake for 35 to 40 minutes.If the bread turns brown quickly cover it with aluminum foil.
9.Let cool down for 10 minutes in the pan and allow to cool completely before cutting.
