An easy loaf of whole-wheat bread which is light, moist and flavourful!

Serves: 8

Ingredients:
1. Whole-wheat flour 2 cups
2. All purpose flour 1/2 cup
3. Additional all purpose flour 1/4 cup
4. Active dry yeast 2 tsp
5. Salt 1 tsp
6. Sugar 2 tbsp
7. Warm milk 1 cup (heat it for 40 seconds in microwave at 750W)
8. Olive oil 2 tbsp
9. Flax egg or egg 1 no.
10. Milk for coating 1 tbsp
11. Sesame seeds 1 tbsp

Method:
• In a large bowl, add whole-wheat flour, all purpose flour, yeast, salt, sugar and blend the ingredients well.
• Then, add warm milk in 2-3 parts and keep mixing to knead a dough.
• Add a flax egg or an egg and knead it into a soft dough.
• Add the additional all purpose flour and knead it again.
• Now, dust some flour on the surface and fold the dough around 60 times.
• Once done, tuck the dough and keep the dough in a bowl, then, cover it with a dry muslin cloth and keep it aside for 10 minutes.
• Meanwhile, pre-heat the oven at 190’C and grease a bread mould.
• After 10 minutes, knead the dough again for 2 minutes.
• Then, flatten the dough using a rolling pin or your palms and start rolling it from one end, giving it a cylindrical shape. Also, tuck the sides.
• Place the rolled dough in the greased pan, cover it with a dry muslin cloth and keep it in a warm place for an hour.
• After an hour, the dough will rise one inch above the mould.
• Brush the top of the bread with milk and sprinkle some sesame seeds.
• Bake it for 30 minutes at 190’C.
• Demould the bread and let it cool completely.
• Cut the slices using a serrated knife and the bread is ready to be consumed.

Note:
• To make 1 flax egg, add 1 tbsp of flax seeds powder to 3 tbsp of water and rest it for 5 minutes.

Suggestions:
• You can make texture on bread after keeping the rolled dough in the greased pan.
• I prefer keeping the dough at rest, in a slightly warm oven. For this, just pre-heat the oven for 10 minutes and turn it off. Once slightly cooled, place the dough for proofing.
