enjoy this super easy, quick and vegan banana bread recipe♡
♡THE RECIPE♡
i n g r e d i e n t s – b a n a n a b r e a d
-2 ripe bananas
-1 tbsp ground flax + 3 tbsp water (or an egg)
-1/3 cup coconut oil (or butter)
-1 tsp vanilla
-1/3 cup coconut sugar (or brown sugar)
-4 tbsp maple syrup
-1/4 cup + 2 tbsp cocoa powder
-1 cup all-purpose flour
-1 tsp baking soda
-sprinkle of salt
i n g r e d i e n t s – c o c o n u t t o p p i n g (optional)
-1.5 tbsp coconut oil
-3/4 cup shredded coconut (i recommend using a bit less than this)
-1 tbsp coconut sugar
h o w t o – b r e a d:
1. preheat oven to 250 F
2. mix flax with water, let sit for 10-15 minutes
3.melt coconut oil in the microwave (approximately 30 seconds)
4. add bananas to coconut oil and mash until a fairly fine consistency
5. add vanilla, flax egg, coconut sugar, maple syrup and stir to combine
6. add cocoa powder, flour, baking soda, salt and stir to combine.
7. put the mixture in a parchment paper-lined loaf tin, bake for 30-45 minutes (or until it can be poked with a toothpick and the toothpick will come out clean)
h o w t o – t o p p i ng (optional):
1. while the bread is baking, melt coconut oil for topping and mix with coconut sugar and shredded coconut
2. put on top of loaf
3. broil in the oven for 2-3 minutes
