Since remote work has been a reality, I’ve started delving deep and into various unexplored areas – one of them being the uncharted culinary territory.
As a kid, I always loved the bread served alongside coffee – it felt so perfect! Being in the States, my eating habits transcended – I started getting conscious, eating more of natural produce and thereby following a healthy lifestyle. But today was one of the days when I felt the urge to eat that bread from our local café. So, quickly glancing through the ingredients at home, banana bread looked like the perfect treat for the evening.
So, I grabbed a couple overripen bananas, added whole wheat flour, baking stuff, a little brown sugar, and some oil to create this quick recipe. We can easily substitute a lot of these based on what’s available readily at home. The outcome would be really soft, moist, and delectable banana bread.
Steps:
1. Preheat Oven at 350°F (or 180°C)
2. Take and slice 3-4 bananas in a bowl
3. Add 4 spoons of brown sugar (can increase it up to 1/2 cup too) – brown, unrefined or granulated sugar
4. Mash the bananas to a smooth paste
5. Add ½ cup Olive oil – most oils go well with this
6. Stir well
7. Mix 1 teaspoon vanilla extract
8. Add 1½ cup whole wheat flour, ½ spoon baking soda, and 1½ spoon baking powder
9. Sieve in the bowl
10. Now is the critical step – Fold the dry ingredients gently with the wet ingredients. This would make the whole bread mixture even and smooth.
11. Now you can add walnuts, seeds, chocolate chips, etc. and mix them
12. Pour the batter in a greased pan
13. Place in preheated oven for ~30 min or till you can get a toothpick inserted come out clean
14. Once out, let the bread cool down completely and then remove from the pan
15. That’s it – Just warm the bread a little before serving
