Lentils are a well-known bean plant. It is rich in plant proteins, folic acid, iron and other trace elements, while it is low in fat. Soups, cereals, side dishes, salads are prepared from lentils. We offer you a recipe for a delicious and healthy lentil salad.

Ingredients:

• Lentils100 g
• Fresh mushrooms 100 g
• Olive oil 15 ml
• Chives 1 bunch
• Lemon juice 20 ml
• Feta cheese 150 g
• Onion 1 piece

Cooking process:

1. Pour lentils into a saucepan and add vegetable broth or water. Bring to a boil and cook over low heat for 15-20 minutes. until ready.

2. Squeeze juice out of half a lemon. Chop the onion finely, cut the mushrooms as well. (I had frozen)

3. Fold the lentils onto a sieve, dry and transfer to a salad bowl. Pour lemon juice and pepper.

4. Heat 2 teaspoons of olive oil in a pan, add onions, mushrooms. Fry for 3-5 minutes until mushrooms become soft.

5. Transfer the onions and mushrooms into a salad bowl, add the green onions, then add the lentils and mix.

6. Crush 150 grams of feta cheese into a salad bowl.

7. Serve the dish on the table, seasoning, if desired, with olive oil and decorating it with finely chopped greens.

Notes:

Can tinned lentils be used?

If you use canned lentils, rinse them before adding to the mixture.

Feed temperature.

It is best to eat this salad warm or at room temperature.
