This is a healthy salad recipe for an avocado, chickpea and egg salad – super quick to make for an easy healthy lunch that is vegetarian, gluten-free, filling and delicious!

Ingredients:
2 tomatoes, chopped
1 cucumber, chopped
2 garlic cloves, minced
2 hard-boiled eggs, chopped
1 cup canned chickpeas, rinsed and drained
1/2 green bell pepper, chopped
2 scallions, chopped
1 cup arugula
handful basil leaves
1/2 cup olives
1/2 avocado
1 tbsp olive oil
1 tbsp lime juice
salt and pepper to taste
optionally: cayenne pepper or crushed red pepper flakes
