Chef Arun Kumar who hails from Kerala and has spent most of his time in the South researching about authentic Ayurvedic food, has two recipes brought in at the Chef Retreat. One is the Achamma’s Mock Meat Curry and the other is Vazhakai Uttapam. These two recipes are highly nutritious and healthy to the body.
The recipe for the first cuisine (Achamma’s Mock Meat Curry) is:
• 4 pieces Raw banana
• 8-10 pieces of Shallots
• 1 cup coconut milk
• 3-4 pieces of Red Chilli
• 2 tsp of Coriander seeds
• ½ tsp of Fenugreek
• Salt to taste
The recipe for the second dish (Vazhakai Uttapam) is:
• 2 pieces of Raw banana
• 2 cup Dosa batter
• ½ cup of Coconut grated
• 2-3 pieces of Green Chilli
• 1 tsp of Cumin
• Banana flowers and stem
• Salt to taste
