Sabudana Khichuri is extremely popular dish in India during fasting season. It’s a very gluten free nutritious option for those who keep fasting. However you can totally eat it in breakfast.

Ingredients:
▪︎ Sabudana pearls – 250g
▪︎ Peanuts- 75g
▪︎ 1 med sized Chopped Potatoes
▪︎ Ghee – 1 1/2 tbsp
▪︎ Cumin seeds – 1/2 tp
▪︎ Mustard seeds- 1/4 tp
▪︎ Curry leaves- 7-10
▪︎ Chopped Coriander leaves
▪︎ Sugar – 1pinch
▪︎ Salt to taste
Procedure:
•Rinse the sabudana until water turns clear to get rid of the starch. This is an important step to do before you soak the sabudana.
•Soak the sabudana overnight.
•Always use 1:1 ratio of sabudana and water. So for 1 cup of sabudana, use 1 cup of water to soak it.
This is the biggest mistake that you can make which results in clumpy khichdi. You want to pearls to be just about submerged in water. A lot of water will result in a gloopy mess!
•In the morning, drain the sabudana. There will hardly be any water left in the morning after you have soaked the sabudana overnight. However drain using a colander just to make sure that there’s no water.
•Check if the sabudana has been properly soaked by pressing a pearl between your thumb and index finger. You should be able to smash it easily.
• Dry roast the peanuts until crunchy and aromatic, remove the skin, grind coarsely.
• Mix the Peanut powder with the Sabudana Pearls, peanuts will soak the extra water from Sabudana making Khichuri non sticky.
• Heat ghee in pan, temper with jeera, mustard seeds and curry leaves, saute for 2mins.
• Add chopped chillies and chopped potatoes, pinch of salt, fry them for 2 mins. Cover the pan with a lid and cook potatoes for 5-7 mins.
• Once potatoes are soft, add the Sabudana into pan, Stir well.
• Add Salt and sugar, mix well, cover and cook for 3-5mins.
• Cook until Sabudana Pearls become translucent and clear.
• Garnish with some coriander leaves, mix well.
At this point turn off the gas and cover for 5mins before serving.
If you follow these tips carefully, you will have a perfect non-sticky sabudana khichdi ready in no time!
