Hi everyone,

This weeks video is all about cheap meal ideas! I use just plain cooked potatoes and use them to create two different meals. I love how simple these meals are and how cheap they are to make too! I’m all about saving money these days. I’ve been trying to create easy, healthy and cheap meals that will help me save money and still keep me on track.

These meals are Starch Solution friendly & Low in Calorie Density. If you want more information on the Starch Solution I recommend you reading Dr. McDougalls book The Starch Solution. It’s life changing!

LEMON POTATOES

• 5 large potatoes,sliced
• Juice of 2 1/2 lemons
• Oregano, garlic powder, pepper & salt

1. Pre Cook potatoes
2. Chop up potatoes
3. Place potatoes in a large baking pan. Add seasonings.
4. Drizzle the lemon juice top. Keep some of the lemon peels in the pan for extra flavor.
5. Cover them with a piece of parchment paper and then on top of that a piece of foil paper.
6. Bake at 375 for 40 minutes. Uncover for the last 10 minutes.

RED LENTILS

• 2 cups red lentils
• 3 cups water
• 1 tsp. Veggie Bouillon

1. Add water and bouillon to a small pot.
2. Let water come to a boil and add the lentils.
3. Cook up until the liquid is absorbed. Stirring from time to time.
4. Remove from heat and give them a good mix.
