In this video Rowan shares a healthy lunch idea which is an amazing chicken salad with a sauce to die for. This salad is a staple in his house and is his version of the Tokyo Classic done by Banana Blossom in Sydney. This one’s great as a healthy lunch idea or a healthy dinner option.
In this video Rowan also shares a great tip on how to cook whole chicken breast fillets to ensure they stay tender and juicy.
Ingredients (serves 2) – Go organic wherever possible:
Soba noodles – 1 packet cooked per packet instructions
Mixed greens – 4 handfuls roughly chopped
Mint – 1 bunch leaves picked
Coriander – 1 bunch roughly chopped (with or without stems)
Avocado – 1 de-seeded, sliced and scooped
Chicken breast – 1 or 2
Black sesame seeds to garnish
Cherry tomatoes and cucumber optional addition
Sauce
Whole egg mayonnaise – 2 tbs
Teriyaki sauce – 2 tsp
Water – 1 to 2 tbs
White pepper to taste
Method
1. Cook chicken breast – oil a pot with ghee (or any other pan frying oil), fry on both sides for 1 minute each, put lid on pot and reduce heat to very low for 10 minutes, then without removing the lid turn the heat off for 10 minutes.
2. Meanwhile cook noodles and prepare vegetables.
3. Shake sauce ingredients in a jar and adjust quantities to suit.
4. Slice chicken to desired size.
5. Layer noodles, then greens, avocado, chicken, sauce, sesame seeds. Enjoy!
