It is something very special, magical and creative to bake your own bread.
Sourdough, water, salt and flour is all you need to create up a delicious bread.
In this recipe I’m mixing it with walnuts and dried plums. But you can use whatever you prefer.

In order to get a crispy crust the bread should be baked in a steam oven. In this video I show you how to achieve perfect results with a bowl. The same can also be achieved with an iron pan or baking stone.

——————————————————————————————————————————Sourdough recipe:
You start the first leaven three days before baking bread, it is important that you feed the starter regularly.
1. day: 50g wholemeal flour
            50ml water
Mix in a tall vessel and leave to stand at room temperature for 24 hours.
2. day: 50g whole wheat flour
            50ml water
covered and let rest for about 24 hours.
3. day: 100g whole wheat flour
            100ml. Water
Your sourdough should be active and the dough is ripe on the fourth day.
Then you can keep the mixture in the fridge and feed it again every time you take something out.

Ingredients:
330ml warm water
1 teaspoons of salt
100g sourdough starter
300g whole wheat flour
200g wheat flour
50g dried plums
50g walnuts

Let ferment at least 12 hours at 5 °C (into the fridge)
Bake in a preheated oven at 250 °C for 30-40 minutes
