Pumpkin Schnitzel with Avocado Cucumber Salad
From pumpkin you can prepare many things. But pumpkin is not only good for soup or to preserve, but also tastes wonderful just fried just as schnitzel.
Pumpkin schnitzel goes well with an avocado cucumber salad, which is sweet-sourly flavored.
Halve the pumpkin, remove the core and slice it. Then cook the pumpkin wedges in salted water for 3-5 minutes and quench in cold water. Now just flour, turn into egg and breadcrumbs last. Fry in a pan in oil from each side.
Pumpkin slice:
1/2 pumpkin
2 eggs
1 cup of flour
1cup of breadcrumbs

nutmeg

1/4 cucumber
1 avocado
1/2 lemon juice
salt
