This low carbs “Rice” is made with cauliflower, lime zest, spices & herbs. It’s super fast, but super healthy & low calories it cooks in a couple of minutes, literally!
Ingredients:
200g of cauliflower florets
30g of butter
some chopped spring onions
some dried herbs & spices you like (parsley & coriander is a good combo)
few pinches of salt
a pinch of pepper
It’s nutritional dense as this cauliflower “rice’ still retains most of its enzymes as it is only gently warmed in the pan with melting butter.
I cook it only for a couple of minute as i also want to retain the “biteness” and crispness of real rice, but it can be steamed cooked for longer by adding a few drops of water to soften it.
It is delicious in every way from completely raw to fully steamed up
