Hey ya’ll, here’s the yummiest granola recipe which is completely vegan and loaded with nutrients. You don’t really have to stick to the same ingredients, feel free to use whatever you have in your pantry. Alternate ingredients are also mentioned.

INGREDIENTS:
4 cups rolled oats
1/2 cup chopped pecans
1/2 cup chopped almonds
1/2 cup pistachios
You can literally use any nuts or seeds that you have at home
1/2 tsp pink salt (or kosher salt)
1 tsp powdered cinnamon (can vary based on your liking)
1/2 cup melted coconut oil (butter if you want it rich)
1/2 cup agave/maple syrup (honey for non vegans)
1 tsp vanilla extract
1/4 cup chia seeds (flax seeds/hemp seeds)
1/4 cup cranberries (raisin/prunes)

STEPS
1. Preheat the oven to 170 C
2. To a large bowl, add the oats, nuts, salt, cinnamon and mix well
3. Add the wet ingredients – oil, agave, vanilla extract and fold it well
4. Line up the baking dish with parchment paper, add the granola mix and spread evenly
5. Bake for 20 mins and toss once in between to avoid burning the top layer
6. Take the granola out of the oven, once its slightly brown on the top and cooked thoroughly and set it aside to cool
7. Add chia seeds and dried cranberries (any dried fruits of your choice) and let it sit
8. Mix well once it cools done

Voila, granola is ready!! Enjoy it with milk and top it up with fresh fruits or create your breakfast parfait with some yogurt and top it with a berry compote.
